PORK FILLET WITH PGI VALTELLINA APPLES, SPRING ONIONS AND BALSAMIC VINEGAR
- 480 gr PORK FILLET
- 2 STARK DELICIOUS APPLES (PGI Valtellina apple)
- 12 SPRING ONIONS
- SALT, PEPPER, OIL AND BALSAMC VINEGAR
- VARIOUS SEASONINGS
Brown the pork fillet in the oil and seasoning, douse with the white wine, season with salt and pepper, and cook for about 3 minutes on each side. Peel the apples; cutting one into slices and dicing the other. Toss the sliced apple in a pan with a knob of butter; this will be used later as a bed for the pork fillet. Now toss the diced apple with the spring onions, which have been previously blanched in the pan used to cook the fillet, thus creating a sauce that will be used as an accompaniment to the meat.
