PGI VALTELLINA APPLE AND PDO VALTELLINA CASERA CHEESE RISOTTO
- 320 gr DI ARBORIO RICE
- 2 GOLDEN DELECIOUS APPLES (PGI VALTELLINA APPLES)
- 150 gr DPO VALTELLINA CASERA CHEESE
- SALT, PEPPER AND VEGETABLE STOCK
Fry the chopped onion in the butter until golden, toast the rice, douse with white wine and allow it to evaporate. Add the vegetable stock and cook until the rice is cooked 'al dente'. In the meantime, peel and dice the apples, toss in a pan with a knob of butter. Cream the rice with the rest of the butter and the PDO Valtellina Casera cheese. Add the previously prepared diced apple chunks and sprinkle with parmesan.
