PORK FILLET WITH PGI VALTELLINA APPLES, RAISINS AND PRUNES


SERVES 2:

  • 1 SMALL PORK FILLET
  • 1 RED DELICIOUS APPLE (PGI Valtellina apple)
  • 6 PRUNES
  • 2 TABLESPOONS RAISINS
  • 2 SPRIGS OF THYME
  • 1 TABLESPOON BUTTER
  • 1 GLASS OF WHITE WINE OR APPLE CIDER VINEGAR
  • SALT AND PEPPER TO TASTE
Preparation

Brown the pork fillet in a heavy-based pan and cook for about 7 minutes. Add the apples, peeled and cut into wedges, the prunes and the raisins. Add the thyme and douse with the white wine or, if preferred, with apple cider vinegar. Season to taste with salt and pepper. Once the meat is cooked through, place the pork fillet in a fan shape on the serving plate with the apples, prunes and raisins.
