PGI BRESAOLA DI VALTELLINA WITH PGI VALTELLINA APPLES AND SLIVERS OF PDO BITTO CHEESE


SERVES 4:

  • 240 gr PGI BRESAOLA DI VALTELLINA
  • 100 gr PDO BITTO CHEESE
  • 2 GOLDEN DELICIOUS APPLES (PGI Valtellina apple)
Preparation

Finely slice the PGI Bresaola di Valtellina on a serving plate. Cut the PDO Bitto cheese into small matchstick-shaped pieces. Peel and julienne the PGI Valtellina apples, add them to the Bitto cheese and sprinkle the mIxture onto the bresaola. Dress with extra-virgin olive oil, apple cider vinegar, salt and pepper.
