CINNAMON-FLAVOURED GRILL-SEARED PGI VALTELLINA APPLES WITH VANILLA SAUCE


SERVES 4:

  • 400 gr GOLDEN DELICIOUS APPLES (PGI Valtellina apple)
  • 100 gr SUGAR
  • 300 ml VANILLA SAUCE
  • 25 gr flour
  • 4 egg yolks
  • 100 gr sugar 
  • 250 ml milk
  • 1 vanilla pod
  • 200 gr DI LATTE' ICE CREAM (WITH NO FLAVOURING)
  • CINNAMON TO TASTE
Preparation

Peel and core the PGI Valtellina apples, cutting them into rounds. Brown the rounds on both sides on a pioda (a heated stone slab used for cooking in the Valtelina). Place the rounds in a casserole, sprinkle with sugar and finish off cooking in the oven at 200°C or 8-10 minutes. Arrange the apples on the serving plates in a fan shape, pour on the vanilla sauce, season with cinnamon and add 'fior di latte' ice cream as an accompaniment. Preparation of the vanilla sauce: Boil the milk with the vanilla pod. Beat the eggs, flour and sugar and add to the boiling milk. Bring the mixture back to a boil.
